For those of us in the southern hemisphere – it SUMMER!! Not that I have anything against winter but summer is definitely my favourite time of year.
This is the time of year, no matter where you live, families come together, for fun and laugher sprinkled with lots and lots of food!
Living in Australia we don’t have the well-know “White Christmas”, instead we sit by the pool, jumping in and out when the heat gets too much, eating our iced lollies as fast as we can without simultaneously giving us a brain freeze and melting down our arms.
I also get to snorkel and scuba dive around the Great Barrier Reef without a wet suit, spend time on the beach and have the odd BBQ and maybe the odd glass of giggle juice!
If you are like me – I love to eat but just can’t bring myself to stand in my hot kitchen while everyone else is enjoying the cool pool or sitting on the deck with the later afternoon breeze. So here are a couple of quick and easy recipes cooked in the EasyOven™ that will satisfy even the fussiest of eaters.

Boiling time: 10 minutes Cooking time in the EasyOven™: 1½ hours Serves 4
3 tablespoons cooking oil
1 medium onion, diced
2 cloves garlic, crushed
1 tomato chopped (Optional)
1 Chorizo sausage, diced (Optional)
2 chicken breast fillets, diced (Optional)
1 cup uncooked white rice
2½ cups water
½ cup white wine
1 teaspoon Turmeric
500grams Fresh mixed seafood (fish, prawns, mussels, squid etc.)
Salt and freshly ground black pepper to taste
Lemon wedges to garnish
Heat the cooking oil in a large pot over medium heat.
Add the turmeric, onion and garlic. Fry until the onion begins to brown.
Add diced Chicken and brown.
Add sausage, rice, tomato, seafood mix, water and white wine to pot.
Bring to a boil and simmer for 10 minutes with lid on. Stirring occasionally.
Remove from heat and place entire pot in to the EasyOven for 1½ hours.
Garnished with lemon wedges. Serve with crusty bread.
COCONUT ORANGE RICE
Preparation: 10 minutes > Boiling Time: 3-5 minutes > Ready in: 40 minutes Serves 3-4 (side dish)
1 Tablespoon cooking oil
1 small onion – diced
3 cloves garlic - diced
2 bay leaves - crushed
1 cup White Rice
2 cups Orange Juice
1/2 cup Water
3⁄4 cup Coconut milk
1 small piece orange rind
Heat the olive oil in a fry pan over high heat, then add the onion and add the garlic. Fry until golden then add bay leaves, season with salt and black pepper. Continue to cook gently until the onion has caramelized. Remove from the heat.
Add rice, orange juice, coconut milk, water and orange rind to the cooked onion, garlic mixture.
Bring to the boil and continue to boil for a further 2 minutes, making sure you stir the mixture so that it does not stick to the bottom of the pot.
Place into EasyOven for a further 1 hour.
