Russian Cabbage Soup Recipe

Russian cabbage soup, Shchi, is one of the most famous soups in Russia.
This hearty soup is fantastic for cold winter days
2 Tbsp. Butter
1 large onion, finely chopped
2 garlic cloves, finely chopped
450g (1lb), green or white cabbage, finely shredded
1 medium carrot, coarsely grated
2 medium potatoes, peeled and diced
4 tomatoes, peeled and chopped
2 bay leaves
4 cups (1 litre) vegetable stock or water
Salt and black pepper to taste
Dill or Parsley for garnishing
Heat the butter in a large saucepan and add the onion and garlic. Cook over a moderate heat until the onion is translucent.
Add the cabbage and carrots, and continue to cook for a few minutes, stirring from time to time so the vegetables cook evenly.
Add the potatoes, tomatoes, bay leaves salt and pepper and vegetable stock.
Bring to the boil and boil for 8 minutes.
Remove from stove and place the pot immediately into the EasyOven and leave for 1 hour.
Serve with dill or parsley, a large dollop of sour cream and crusty bread on the side.
Dal: Lentil Soup

3 tablespoon Oil
1 teaspoon Turmeric Powder
2 teaspoon Coriander Powder
2 teaspoon Cumin Powder
1 Chilli pepper finely chopped
1 large Onion finely chopped
1 large Tomato chopped
1 cup Dal lentils (see tips)
Salt and pepper to taste
4 cups Water
1. Heat oil in a pot. Add onion and cook until it softens.
2. Add tomato, turmeric,, salt , coriander, cumin and chilli to the mix and cook for 1 minute.
3. Add Dal and water. Stir this well mixed.
4. Bring to boil and boil for 10 minutes.
5. Remove from heat and place entire pot into the EasyOven™ and close.
6. Leave for 60 minutes and then serve.
